
AUTUMN SALAD WITH RED CABBAGE

Proceedings
1 Wash and boil the potatoes until they are soft. It will take about 20/30 min. At the end, drain them, remove the skin and crush them.
2 While the potatoes are cooking, dedicate yourself to the mushrooms: clean them and cut them into small slices.
3 Heat a drizzle of oil in a pan and sauté the mushrooms. At the end of cooking, add salt and chopped parsley to taste.
4 Take back the crushed potatoes and add the egg, Parmesan and salt. Stir until everything is combined.
5 Grease four aluminum molds with oil and fill them half with the potato mixture.
6 Place a spoonful of mushrooms in the center of the mold.
7 Also add the provola cheese and seal well with another potato mixture.
8 Level well and bake at 200 degrees for about 30 minutes, until golden brown.
9 After the cooking time has elapsed, the pies are ready to be enjoyed!
