Proceedings
1 Start by cleaning and chopping the onions.
2 Heat butter and olive oil in a pot, add the onions and let them dry for about 20 minutes.
3 In the meantime, heat the broth in a separate saucepan.
4 When the onions are transparent, add the flour and sugar, stirring until the flour takes color.
5 Deglaze with the white wine and let it evaporate.
6 Now pour in the broth until the onions are completely covered.
7 Season with salt, pepper and thyme. Lower the heat and cook for about an hour, adding broth if necessary.
8 Once ready, pour the soup into a crock.
9 Place the bread slices and cheese on the surface.
10 Bake at 180°C for a few minutes, until the cheese is au gratin. Take out the oven and serve while still warm!
